we live in Canada & have a spoon almost identical to this,
Ours has the lock on the folding handle. we were told by antique appraisers, that it was most likely carried by a Priest to administer Last Rights to the dying. Does the engraving translate " Remember We Shall Die" ?

Yes, that is correct, the phrase engraved on spoon NF.1980-0045 is Memento mori, a Latin phrase translated as "Remember your mortality", "Remember you must die".
Ufortunately we have little further information concerning the spoon.
